How to Preserve Okra Okra Soup (with frozen okra) Ingredients
I used the following ingredients:
- 1.5 cups frozen chopped okra
- 800g beef
- 2 red sea bream fish
- 300g baby spinach
- 3 cooking spoons red palm oil
- 3 tablespoons ground ogbono
- 2 tablespoons crayfish
- 1 tablespoon ogiri okpei (fermented dry locust beans)
- 3 Homemade seasoning cubes
- 2 habanero peppers
- 1 onion
Notes on the Ingredients
1. The frozen okra must remain in the freezer till you are ready to add it into the pot of Okra Soup.
2. If you do not have ogiri okpei, you can skip it.
Directions for Preparing Okra Soup with frozen okra
Steam the beef with the seasoning cubes and onions (chopped) till the beef is pale all over.
Add a small quantity of water and start cooking.
Top up the water as necessary and cook till the beef is well done.
Add the fish and steam till cooked then take out every meat in fish from the pot and set aside.
Top up the water a bit and add the ground ogbono and palm oil and cook for about 15 minutes on medium heat, stirring it often because ogbono sticks to the pot easily.
After 15 minutes, add the crayfish, pepper and stir very well.
Take the okra from the freezer and put into the pot.
Add the spinach, cover and let it steam for at most 2 minutes. Stir and add some salt if necessary.
Put back the meat and fish, stir, cover and leave to simmer.
It’s ready to be served with any Nigerian meal, such as Fufu, Semovita, Pounded yam or Poundo yam and Eba.
